Simmer 160g frozen strawberries & splash of water in a pan.
Mix 85g Greek yoghurt + 70g cream cheese.
In a bowl, mix 220g apple sauce, 240g oats, 1 tsp baking powder, 2 tbsp maple syrup, 1 tsp cinnamon, 60g vanilla protein, 400ml milk.
Pour into a dish, swirl in strawberry & yoghurt mix.
Bake for 35-40 mins.
Cook chicken & courgette (air fryer): Chicken: 12-15 mins at 200°C (or oven/pan-fry!). Courgette: 10-12 mins at 200°C (or oven/pan-fry!).
Chop & mix salad: couscous, butterbeans, sweetcorn, spring onion, feta, courgette, chicken.
Whisk dressing: 3 tbsp olive oil, juice of 1 lemon, 1 tsp oregano, 1 tsp Dijon mustard, salt & pepper. Keep on the side for freshness.
Make PB rice cakes: Spread PB, dip in choc, add toppings, chill in fridge/freezer.
