Heat up a skillet or frying pan on medium-high heat with a bit of neutral oil
Fold and clump 2-3 pieces of mortadella to make small piles
Add the mortadella piles to the pan and cook until browned and crispy on one side
Flip the mortadella piles and add a slice or two of provolone cheese to each pile
Cook until the other side of the mortadella is browned and the cheese is melted
Slice the bun in half and toast each side in the skillet
Spread mayonnaise on one bun half and mustard on the other
Stack the mortadella and cheese piles on one bun half
Cover with the other bun half and enjoy
