Season chicken generously with garlic salt, onion powder, paprika, and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Cook chicken 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
Reduce heat to medium. Add butter to the skillet and let melt.
Whisk in flour and cook for 1-2 minutes to create a roux.
Slowly pour in chicken broth while whisking until smooth and thickened.
Stir in heavy cream (or half-and-half) and parmesan cheese. Simmer until the gravy is rich, creamy, and silky smooth.
Return the chicken to the skillet and spoon the sauce over top. Simmer for 3-5 minutes.
Serve over warm mashed potatoes and drizzle with plenty of that creamy garlic gravy.
