Preheat oven to 350°F and line a baking sheet with parchment paper.
Heat diced apples with maple syrup, cinnamon, lemon juice, and salt for 6–8 minutes until softened.
Mix protein powder, honey, oat flour, oats, and Greek yogurt until thick and wet.
Fold in the apples and blueberries. Scoop into 12 cookies and place on the baking sheet.
Bake for 12 minutes. Pull them out while still soft.
