Chicken Souvlaki:
1 lb chicken breast, cut into bite-sized pieces

Yellow Rice:
1 cup basmati rice
2 cups chicken broth or water
1 tbsp olive oil
½ tsp turmeric (for color)
½ tsp salt
Tzatziki Sauce:
1 cup Greek yogurt
½ cup cucumber, grated & squeezed dry
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp fresh dill (or ½ tsp dried)
Pinch of salt
Fresh Toppings:
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ cup red onion, thinly sliced
½ cup feta cheese, crumbled
2 tbsp fresh parsley, chopped

👩🍳 Instructions
1️⃣ Marinate chicken:
In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and marinate for 15–30 minutes (or longer for more flavor).
2️⃣ Cook rice:
Rinse rice, then cook with broth, olive oil, turmeric, and salt. Simmer for 12–15 minutes until fluffy.
3️⃣ Make tzatziki:
In a bowl, combine Greek yogurt, grated cucumber (squeezed dry), garlic, lemon juice, olive oil, dill, and salt. Mix well and chill.
4️⃣ Cook chicken:
Heat a grill pan or skillet over medium-high heat. Cook chicken for 8–10 minutes, turning occasionally, until golden and fully cooked.
5️⃣ Assemble bowls:
Add a base of yellow rice, then top with grilled chicken.
6️⃣ Add toppings:
Arrange tomatoes, cucumber, red onion, and feta around the bowl.
7️⃣ Finish & serve:
Drizzle with tzatziki, sprinkle parsley, and serve with lemon wedges.
