In a bowl, mix together hot honey, soy sauce, and garlic and set aside
Dice chicken and season with salt and pepper. Set aside
In medium pan, sauté onions and cabbage in 1 tsp of oil, stirring occasionally until cabbage is tender (10-15 minutes)
Season cabbage with salt and pepper while cooking
Remove cabbage and onions from pan
In same pan, add remaining oil and chicken. Sauté until chicken is cooked through
Add sauce to chicken and let cook down for a few minutes
If sauce is too thin, add cornstarch slurry (water + cornstarch) to thicken
Serve chicken over cabbage/onion mix and rice
