Slice the celery however you'd like - stalks, slices, cubes, or diced (diced celery will develop flavor faster)
Combine distilled white vinegar, distilled water, kosher salt, and sugar
Add coriander seed, white peppercorns, black peppercorns, and mustard seeds to the vinegar mixture
Add fresh dill, garlic clove, and bay leaf
Pour the pickling liquid over the sliced celery
Allow to pickle (optional: adjust sugar for sweeter pickles or substitute rice wine vinegar for different flavor)
