Zero Carb Pizza Calzones
  1. Pizza Sauce: ½ cup strained tomato passata (or canned crushed tomatoes) ½ tsp: salt, garlic powder, basil flakes ¼ teaspoon: oregano flake, no calorie granulated sugar substitute ½ tbsp extra virgin olive oil (optional)

  2. Zero Carb Chicken Calzone Dough: 1lb (454 g) chicken breast ground (can sub. extra lean pre-ground chicken breast) 1 tsp: garlic powder, paprika ½ tsp salt

  3. To Assemble: Chicken Calzone Dough, divided into 3 balls (~52 g each) 3 slices low fat mozzarella cheese, divided 12 slices turkey pepperoni, chopped & divided ¼ cup (30 g) grated parmesan cheese, divided

  4. Preheat oven to 400° F and line a baking tray with parchment. Stir the seasonings and tomato passata in a small saucepan over medium heat until bubbly and flavors are infused (~3-5 minutes). Set aside.

  5. Grind chicken with seasonings in a food processor until smooth. Divide into 3 balls and roll out into smaller circles between layers of greased parchment paper. Add fillings: sauce, cheese, pepperoni.

  6. Lift one side of the parchment and fold over to cover the fillings. Press edges down gently to seal. Pat gently with paper towel to ensure each pocket is dry.

  7. Bake for ~15 minutes on middle rack, then transfer to the top rack for ~5-10 depending on desired crispiness. Optional: Broil on "High" for ~2-5 minutes. Enjoy!
