Prep two 8" pans and preheat oven to 350°.
Sift flour, cocoa, powder, soda, and salt together
Mix oil, sugar, buttermilk, vinegar, food coloring, and vanilla
Add eggs one at a time
Combine dry and wet ingredients
Bake for 35-40 minutes
Let cool in pans 10 minutes, then turn out onto wire racks to cool completely
When ready to frost, cut each layer in half
Frost with 1.5 batch ermine frosting
