Lemon Muffins
  1. Preheat oven 425F

  2. Whisk all dry ingredients in 1 bowl (except sugar)

  3. Mix lemon zest with sugar in a separate bowl (get the lemon oil in lemon zest mixed with sugar to enhance the lemon smell)

  4. Add in the sugar bowl: butter, yogurt, eggs, milk, vanilla, lemon juice -> mix well

  5. Pour wet mixture into flour mixture

  6. Fold lightly with spatula (enough till no visible flour, NO OVERMIX)

  7. Fill in muffin cup

  8. Bake at 425F for 15 min
