Preheat your oven to 400°F (200°C). Arrange the potato slices on a baking sheet in a single layer. Bake for about 25–30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
Remove the potatoes from the oven and immediately sprinkle shredded cheddar cheese over the top. Add the crumbled bacon evenly across the potatoes. Return the tray to the oven for another 5–7 minutes, or until the cheese is fully melted and bubbly.
