Spaghetti Alla Carrettiera
  1. Boil spaghetti in salted water for about 6 minutes

  2. In a pan, combine 5 tablespoons of extra virgin olive oil, 1 chopped garlic clove, 2 grated garlic cloves, handful of freshly chopped parsley, and 1-2 chili peppers (plus ½ teaspoon Calabrian chili paste if desired)

  3. Transfer the partially cooked spaghetti to the pan with the sauce

  4. Continue cooking for about 4 more minutes, slowly adding small ladles of starchy pasta water to create a creamy sauce

  5. Remove from heat

  6. Add 100 grams of freshly grated pecorino cheese and mix well

  7. Add a little more pasta water as needed

  8. Serve immediately
