Heat the vegetable oil in a large pan over medium heat.
Add the chopped onion and minced garlic and sauté until softened.
Add the sliced green bell peppers, red bell peppers, and grated carrots to the pan and cook for 5-7 minutes until they start to soften.
Add the canned baked beans, chopped tomatoes, curry powder, paprika, cayenne pepper, salt, and pepper to the pan. Stir well to combine.
Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally.
Remove from heat and let cool slightly before serving.
Serve the chakalaka as a side dish or with grilled meats.
