Marinade

    Dipping sauce

  1. Pound the coriander root (or stems) and garlic in a mortar and pestle

  2. Add the soy sauce, fish sauce, oyster sauce, palm sugar, and white pepper to the pounded garlic and coriander

  3. Marinate the pork jowl in the mixture for 4 hours

  4. Grill meat yum

  5. To make the sauce

  6. Toast the rice in a pan until lightly browned, then let it cool and grind it into a powder

  7. Combine the fish sauce, lime juice, toasted rice powder, ground dried chili, sliced shallot, and optional tamarind paste in a bowl

  8. Add the green onion, mint, coriander, and saw tooth coriander

  9. Slice the roasted pork jowl across the grain

  10. Serve the pork with the nam jim jaew dipping sauce and sticky rice
