Combine egg and 1 tablespoon water in a shallow bowl.
Mix bread crumbs and seasoning salt in another shallow bowl.
If the pork chops have fat along the edge, remove the excess. Then cut into any remaining fat to prevent the meat from curling when cooking.
Heat about 2 tablespoons olive oil or butter in a large flat-bottomed frying pan over high heat.
Coat the first pork chop with breadcrumb mixture, dip in the egg mixture, then re-coat with more breadcrumbs.
Carefully place chop into frying pan. Repeat with remaining chops.
Turn chops when nicely browned on one side. Cover frying pan and lower heat to continue browning and cooking the chops until done, about 20 minutes.
Transfer fried pork chops to a plate lined with a paper towel before serving.
