7 Ingredient Vegan Stuffed Mushroom Meatballs
  1. Start by pulling the tops off of your mushrooms. Chop the stems up with garlic and red onion very fine.

  2. Season and Fry off the onion garlic and mushroom stems for 5-10 mins until the onions caramelize and the mushrooms release their juices.

  3. Add in the lentils and chestnut and stir to combine, turn off the heat and then add in the breadcrumbs.

  4. Pre heat your oven to 190C. Then fill your mushroom cups with some plant based cheese and then the lentil filling. Pressing it firmly into the cup.

  5. Now add some butter to the pan and sear the bottom of the mushrooms for 5 mins, then add that pan to the oven for 15 mins.

  6. It should crisp up and get jammy and oozey. Top with your choice of toppings and enjoy!!
