Add all dressing ingredients to a food processor and whirl until smooth. Alternatively, you can do a really good job of whisking the ingredients in a small bowl if you prefer.
Cover and refrigerate the dressing for at least 12 hours.
Place all salad ingredients except Parmesan in a large bowl and toss to combine. Add the dressing and toss well using tongs. Top individual servings with shaved Parmesan and a few extra grinds of black pepper.
This is an important final touch.
