Season salmon filets with salt, black pepper, garlic powder, and paprika
Heat olive oil in a wok or pan and cook salmon until halfway cooked, then flip and cook through until done
Remove cooked salmon from the pan
In the same pan, sauté diced shallot and minced garlic until aromatic
Add chopped roma tomatoes to the pan
Reduce heat and simmer for 5 minutes
Season the tomato sauce with chicken bouillon, sugar, and fish sauce
Add the cooked salmon back into the sauce
Turn off heat and spoon sauce over the salmon
Garnish with chopped scallion, cilantro, and thinly sliced onions
