knead all the ingredients for the tarte flambée dough quickly into a smooth dough. If necessary, use a little more or less water so that the dough is neither too dry and crumbly nor soggy.
Cover the dough and leave to rest for approx. 30 minutes. Meanwhile, preheat the oven to as high a temperature as possible (250-300 degrees). If you have a pizza stone, preheat this in the oven too.
Roll out the dough on a lightly floured work surface into 4 very thin oval bases and top as desired (see tips). Depending on the temperature, tarte flambée will take approx. 3-5 minutes on the pizza stone and 7-10 minutes on the tray.
Mushroom/Cheese Flammkuchen: cover the dough with sour cream and pepper, add pre-fried mushrooms and oiled onions. Add mozzarella
