Jalapeño and Cilantro Slaw

Ingredients:

• Slaw:

• ½ head cabbage, sliced thinly

• 3 carrots, grated

• ½ red onion, halved and sliced thinly

• 2 jalapeño peppers, seeded and sliced thinly

• ½ cup fresh cilantro, chopped

• Dressing:

• ¾ cup mayonnaise

• Juice of 2 limes (about 3 tablespoons)

• ½ teaspoon cayenne pepper

• 2 tablespoons honey

• Kosher salt, to taste

• Black pepper, to taste

    Instructions:

  1. In a large bowl, whisk together all the dressing ingredients until smooth.

  2. Add the slaw ingredients to the bowl with the dressing.

  3. Toss everything together until evenly coated.

  4. Serve immediately or refrigerate for up to 2 days.
