Preheat your oven to 400°F
Prepare the onions and garlic by slicing the onions and placing them in a baking dish.
Mix in the chopped sun-dried tomatoes, sun-dried tomato oil, smoked paprika, Italian seasoning, salt, and black pepper. Toss everything to coat evenly.
Add the whole garlic bulbs with the tops sliced off right in the middle.
Cover the dish with foil and bake for about 30 minutes. Remove the foil, stir, and bake uncovered for another 30-40 minutes until the onions are golden and caramelized.
