Preheat oven to 350. Put the butter in a metal or ovenproof mixing bowl and place it in preheating oven to melt. While it melts get baking pan ready (use either a standard loaf pan or a 9 inch round pan). Mash bananas (I always do this in a measuring cup so I can tell when I have enough).
Mix wet ingredients. When butter is just melted, remove pan from oven and (being careful not to burn yourself on the hot pan) add the oil. Use the cup you measured the oil in to measure the honey (the oil keeps it from sticking to the cup) and the brown sugar. Mix with a mixer or whisk till it is a nice emulsion. By this time it should be cool enough to add the egg. Mix till emulsified. Add peanut butter, sour cream, and vanilla. Mix in mashed banana.
Mix dry ingredients (salt, leavenings, flour) and add to the wet ones. Mix it all gently till flour is just combined. Scrape into loaf pan oven and bake for 35-40 minutes. Check at half hour if baking in a flat pan.
