Sticky Pork Ribs
  1. Start by squeezing the juice of the limes into a mixing bowl.

  2. Grate the ginger using a microplane and add it to the bowl.

  3. Grate the garlic and add it to the mixing bowl.

  4. Finely chop the chilli and add it to the bowl.

  5. If desired, add the lemongrass to the mixture.

  6. Add a spoonful of brown sugar to the bowl.

  7. Pour in 2 spoons of soy sauce.

  8. Add two tablespoons of fish sauce.

  9. Incorporate three large tablespoons of rice wine vinegar.

  10. Add two tablespoons of sesame oil.

  11. Drizzle in some honey and mix everything together until well combined and dissolved.

  12. Taste the marinade and adjust with more soy sauce if necessary.

  13. Pour the marinade over the pork ribs and ensure they are well coated.

  14. Transfer the ribs to a baking dish, arranging them neatly.

  15. Pour the remaining marinade over the ribs.

  16. Cover the dish and place it in the oven set to 140 degrees Celsius for about 2 hours. Or pressure cook.

  17. After 2 hours, remove the lid and increase the oven temperature to 180 degrees Celsius and cook for an additional 20 minutes until the ribs are golden brown.

  18. Before serving, squeeze fresh lime juice over the cooked ribs.

  19. Optionally, garnish with toppings such as peanuts, crispy shallots, crispy garlic, sesame seeds, fresh coriander, and pickled ginger.
