Ingredients
2 chicken breasts (cut into bite-sized pieces)
1 cup orzo pasta
1 cup cherry tomatoes (halved)
2 cups fresh spinach
1 cup heavy cream
½ cup chicken broth
¼ cup grated Parmesan cheese
2 garlic cloves (minced)
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper (to taste)

Cook Chicken: In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook the chicken pieces until golden and cooked through, about 6-8 minutes. Remove and set aside.
Prepare Orzo: In the same skillet, add minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and heavy cream, then bring to a simmer. Stir in orzo and cook for 8-10 minutes until tender, stirring occasionally.
Add Veggies: Once the orzo is cooked, stir in the spinach and cherry tomatoes. Let them cook for 2-3 minutes until the spinach wilts and tomatoes soften.
Combine and Serve: Return the cooked chicken to the skillet, stir in Parmesan cheese, and cook for another 2 minutes to heat everything through. Adjust seasoning with salt and pepper, then serve hot!
