Preheat your oven to 420°F (215°C) and grease a baking sheet.
Roll out the pizza dough into a large rectangle.
Lay slices of provolone or mozzarella cheese across one half of the dough.
Fold the empty half of the dough over the cheese layer, pressing down firmly along the edges to seal it.
Use a pizza cutter or sharp knife to slice the dough into long, even breadstick strips.
In a small bowl, combine the melted butter, minced garlic, and fresh chopped parsley.
Brush this mixture generously over the tops of the breadsticks, then dust with grated Parmesan cheese.
Bake for 10–12 minutes until the breadsticks are puffed, golden-brown, and the cheese inside is beautifully melted.
Pull them apart while hot and serve with ranch or marinara.
