Shepherd's Pie
  1. Boil the potatoes until fork tender

  2. Brown the ground beef

  3. Add the onions, frozen corn, frozen peas, and frozen carrots to the beef

  4. Add the tomato paste and tomato sauce, stir to combine

  5. Make a well in the middle, add olive oil and flour, cook for 2-3 minutes

  6. Slowly add the chicken stock, stirring constantly, and bring to a simmer

  7. Add seasonings and let simmer for 5 minutes

  8. For the mashed potatoes, add half and half, butter, cream cheese, sour cream, and Parmesan, and seasonings, and mix well

  9. Add the beef mixture to a baking dish, top with shredded cheddar and Parmesan cheese

  10. Top with the mashed potatoes and more shredded cheese

  11. Bake at 375°F for 25-30 minutes
