Make the marinade: In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, soy sauce (if using), rosemary, thyme, garlic powder, and onion powder.
Prepare the tofu: Place the tofu slabs on the baking sheet. Brush both sides generously with the marinade.
Coat with breadcrumbs/pecans: Press breadcrumbs or crushed pecans onto each tofu slab for a crust (optional but adds texture).
Bake: Bake for 20 minutes, then flip the tofu slabs, brush again with marinade, and bake for another 15-20 minutes, until golden and slightly crisp.
Serve: Garnish with extra rosemary or thyme and serve alongside traditional Thanksgiving sides like stuffing, cranberry sauce, and roasted veggies.
