Simple Pork Satay Skewers
  1. Soak skewers in water for 15 minutes if wooden.

  2. Bash together coriander seeds, cumin seeds, sugar, ginger, and garlic. Stir in turmeric and sunflower oil.

  3. Toss pork pieces with the spice mixture and thread onto skewers. Marinate in the fridge for at least 1 hour.

  4. Pound ginger, garlic, and chili to form a paste.

  5. Heat sunflower oil in a saucepan, fry the paste, then add soy sauce, peanut butter, coconut milk. Simmer until thickened. Add lime juice.

  6. Heat a griddle pan, brush pork skewers with oil, fry for 2–3 minutes each side. Remove from heat.

  7. Drizzle satay sauce over skewers, top with toasted sesame seeds.
