Preheat oven to 350°F (175°C) and grease or line a mini muffin tin. If using the air fryer, preheat to 320°F (160°C) and prepare silicone liners.
In a bowl, whisk together cottage cheese, eggs, vanilla, honey/maple syrup until smooth.
Add flour, baking powder, salt and protein powder if using. Stir until combined.
Fold in blueberries.
Bake for 18-22 minutes until golden and set. For air fryer: cook for 12-15 minutes until firm and lightly browned.
Let them cool slightly before removing from the tin or liners.
Freeze remainder, or store in fridge up to 3 days. Can reheat in microwave.
