Roughly chop broccolini into smaller pieces about 3cm long.
Finely chop garlic (or used pre minced) and finely slice spring onion.
Heat a large frypan on high heat. Add extra virgin olive oil.
Add garlic and cook for 30 seconds. Now add broccolini.
Cook stirring for 3 minutes. Remove from pan and set aside.
Add another drizzle of olive oil and the beef mince.
Cook through for approx 5 minutes. breaking it up with a spoon to prevent lumps forming.
Meanwhile, make stirfry sauce by whisking all the listed ingredients together in a jug/bowl.
Pour this over the browned mince and add sliced spring onion. Cook for another 1-2 minutes.
Add broccolini back to the mince and heat through.
Serve with rice, shredded carrot, spring onions and roasted cashews.
