Shakshuka

Ingredients :

  1. Preheat oven to 375ºF

  2. Finely dice onion, garlic, and bell pepper and set aside

  3. Open both cans of tomatoes

  4. Put skillet over high heat with about 3 tbsp olive oil and when it moves like water, add veggies and salt and sweat over medium-low heat

  5. Add sriracha, cumin, paprika, and oregano. After a minute, add both cans of tomatoes and sugar

  6. Mix, turn heat to medium-high and reduce for 5-7 minutes

  7. Make 4 indentations in the sauce and crack eggs into thickened sauce, season with salt and pepper and bake for 7-10 minutes or until the egg whites have just turned white

  8. Prepare garnish by crumbling feta, roughly chopping cilantro, and dice or slice avocado

  9. Take out skillet, top with garnish and cool slightly. Then eat straight out the skillet using the bread as a utensil
