Press Saute mode on the Instant Pot and add the oil. Cook the ground turkey until cooked through. Add a splash of the broth to the pot to scrape off any brown bits stuck to the bottom.
Add in the onion and garlic. Saute for a couple minutes until onion is translucent. Add in the rest of the broth, marinara, tomatoes, seasonings, and zucchini.
Without mixing, break the lasagna noodles into smaller pieces and submerge under the liquid. Cover the Instant Pot and press Soup mode for 4 minutes.
When done, mix in the balsamic vinegar, Parmesan, and ricotta. Taste and adjust with more seasonings or cheese.
Serve with a dollop of ricotta and Parmesan. Enjoy!
