Sour Cream Banana Bread
  1. Preheat oven to 350°F.

  2. Grease a 9x4" loaf pan well, using butter or canola oil.

  3. Combine flour, baking soda & salt then set aside.

  4. Combine sugar, mashed bananas, eggs, butter, sour cream & vanilla extract. Mix well.

  5. Add flour mixture to banana mixture, combine gently but well. Do not over mix.

  6. Fold in chocolate chips, if using.

  7. Bake on the center oven rack until golden brown (50-55 minutes), or until a skewer in the centre comes out with moist crumbs but no wet batter. You do not want the stick to come out dry, this means it is overdone.

  8. Let loaf cool in pan for 5 minutes then turn out onto a cooling rack.
