Firstly, add the porridge oats to a large saucepan with the water. Bring the water to a boil then simmer for 20 minutes, stirring frequently.
In another pan add the oil and heat to medium, add in the mushrooms and fry until soft. Add the kale, stir and fry until wilted. Season with a little salt.
Stir the nutritional yeast, salt, pepper, & lemon juice into the oatmeal. Top with the mushrooms and kale and a splash of toasted sesame oil. Top with the seeds.
