    Coulis

  1. For the puree, combine the mixed fruit, sugar and 50ml of water in a saucepan, bring to boil and cook until the fruit begins to break up. About 5 minutes. Place in blender until smooth and pass through a fine sieve to remove seeds.

  2. Combine the milk and vanilla in a saucepan and bring to just boiling.

  3. Whisk the egg yolks and sugar in a bowl until pale and thick, then pour the warm milk stirring constantly.

  4. Pour mixture back into the pan and cook over a medium heat, stirring with a spatula until coats the back of a spoon consistency is achieved.

  5. Squeeze excess water out of gelatine add to hot custard mix stir until dissolved, sieve into a bowl and leave to cool for 10 minutes, mix in fruit puree.

  6. Whisk cream to soft peak and fold through the fruit custard. Dived into metal rings with sponge on bottom and plastic collar to prevent sticking.

  7. Thickining the rest of your coulis with cornflour to allow it to sit on top

  8. Whisk chantilly to use for finishing.
