Preheat the oven to 375°F (190°C).
Thinly slice the potatoes and onion using a mandolin.
Layer the potato and onion slices in a greased cake pan, drizzling with chicken fat and seasoning with salt and pepper between each layer.
Press down on the layers to compact them.
Cover the cake pan with foil and bake for 30 minutes.
Remove the foil and continue baking for another 30-40 minutes, or until the potatoes are golden brown and crispy.
Let the potato and onion cake cool slightly before slicing and serving.
