Creamy Sun Dried Tomato Chicken Couscous
  1. Heat the butter and oil and add the chicken, searing on all sides until lightly browned, about five minutes.

  2. Add the shallot and garlic and cook a few minutes until softened.

  3. Add the sun-dried tomatoes, couscous and seasonings and stir until everything is well coated.

  4. Add the broth, stir, bring to a simmer and then cover and simmer for 15 minutes until the liquid is absorbed and the couscous is al dente.

  5. Stir in the pesto, cream, kale and Parmesan and serve topped with more parm, basil and pepper!
