Preheat oven to 375°F (190°C).
Brush baguette slices lightly with olive oil and toast on a baking sheet for ~8–10 minutes, until golden and crisp. Let cool slightly.
In a small bowl, mix together: ½ cup sour cream, 2 tsp honey, ¼ tsp freshly ground black pepper, ½ tsp thyme leaves.
Whip by hand until smooth and fluffy (or use a hand mixer for a lighter texture). Chill until ready to use.
Spread a generous layer of whipped sour cream on each toast.
Add a small spoonful of fig jam over the top (you can swirl it in or leave it layered).
Sprinkle lightly with truffle seasoning—go easy, a little goes a long way.
Garnish with an extra thyme leaf or two, and optionally, a tiny pinch of flaky salt.
