Preheat oven to 350°F.
Add the oat flour, flax meal, baking powder and soda, cinnamon and pumpkin pie spice to a large mixing bowl and stir well.
Add the dates, soy milk and vanilla extract to a blender and blend until dates are pulverized.
Pour mixture into the mixing bowl with the dry ingredients.
Add the apple sauce, walnuts and chopped apples and stir well.
Pour into a silicone bread pan or parchment lined bread tin and smooth the top.
Bake for 40 minutes.
Let cool before slicing. Keep in a container in the fridge for up to a week.
