Baking Soda Bath
Cheese Dip
In a large mixing bowl, whisk together warm water, yeast, and sugar.
Mix in flour and salt until a dough forms. Knead until smooth.
Cover the mixing bowl with a towel and let rise for 1 hour, or until doubled in size.
Once the dough has risen, divide it into 6 pieces. Roll them into about 10 inch logs and flatten.
Place the end of a hot dog at the end of the log and roll it up.
Repeat this process with the rest of the dough and hot dogs.
Dip them in a baking soda water bath and transfer to a parchment paper lined baking sheet.
Bake on 425 for 10-12 minutes, or until golden brown.
Brush with melted butter and sprinkle with flaky salt.
For the cheese dip, melt butter in a saucepan on low heat.
Whisk in flour until a paste forms.
Whisk in milk and cook for about 1-2 minutes, or until it starts to thicken.
Turn off the heat, and whisk in shredded cheddar cheese, American cheese, and salt.
