Udon Noodle Stir Fry Beef
  1. Prep all of your veggies because once you start cooking it will go by very fast. Slice your onions, julienne carrots, slice mushrooms, and cut bell pepper into strips. You can easily sub the veggies out for ones you already have. If you need to thinly slice your beef, now is the time to do it.

  2. Cook your udon noodles. You can cook udon noodles in its frozen state. They cook fast.. a couple of minutes in boiling water is all you need. Once your noodles are done cooking, rinse and drain well under cold water. To prevent noodles from sticking, drizzle some sesame oil all over and give it a nice mix.

  3. Now that you have your prep work done, you are ready to cook! In a pan, heat up some olive oil and saute your garlic until fragrant. Then add thinly sliced beef, spread your beef out so it’s a nice even layer and leave to cook untouched for a couple of minutes or until it starts to brown. Before touching the beef, season it with: salt and black pepper to taste, 2 tsp soy sauce and 2 tsp dark soy sauce.. NOW give it a mix. Cook for another 1-2 minutes and then remove beef from heat.

  4. In the same pan, heat some oil and cook until fragrant. Then add your mushrooms and cook for ~1 minute.

  5. Add onions, carrots and bell pepper. Cook for 3-5 minutes.

  6. Add cooked udon noodles and give it a little mix.

  7. Add cooked beef and give it a mix.

  8. Add all your ingredients listed under SAUCE. I like to prepare this ahead of time in a separate bowl before pouring into my noodles.

  9. Once everything is well combined, turn off heat and finish with chopped scallion.
