Butter Chicken
  1. Grill or broil the chicken on high heat until lightly charred and almost cooked through. Reserve any juices.

  2. Melt 3 tbsp butter in a large saucepan. Add the garlic and ginger and cook for 1 minute.

  3. Add the tomatoes, cinnamon stick, green chilli, cardamom, cloves, cashews, Kashmiri chilli powder, sugar and water.

  4. Simmer for 20-25 minutes until everything is soft and fragrant.

  5. Remove the cinnamon stick if desired, then blend until completely smooth.

  6. Return the sauce to the pan and stir through the chicken, reserved juices, garam masala, fenugreek, cream and salt.

  7. Simmer for 5-10 minutes until the chicken is cooked through.

  8. Finish with the remaining 2 tbsp butter.
