Add chia seeds and hot water to a bowl. Mix for about 30 seconds until the chia seeds gel up.
Stir in Greek yogurt, protein powder, powdered peanut butter, and maple syrup until smooth.
Scoop into a jar or glass if desired or smooth out the top in the bowl.
Add chocolate chips and coconut oil to a microwave safe bowl and heat in 30 second increments until smooth. Pour over the top of the chia pudding.
Place in the fridge or freezer for a few minutes until the chocolate top sets.
Crack the chocolate with a spoon and enjoy!
