Transfer the batter to a mixing bowl and gently fold in the diced apple pieces. Let the batter rest for 5 minutes.
Air Fryer Method: Preheat your air fryer to 350°F (175°C). Lightly spray a mini muffin tin or silicone molds with cooking spray. Fill each cavity about ⅔ full with batter.
