Preheat oven to 275. Line a large cookie sheet with parchment paper.
In a large bowl, combine sugar and water. Microwave on high for a couple of minutes to dissolve the sugar.
Stir in the vanilla and salt.
Add the oats and almonds and stir until they are coated with the sugar mixture.
Spread thinly onto the baking sheet, and bake for 45 minutes.
It'll feel a bit pliable when you take it out of the oven, but it'll be crunchy when it cools.
