Moist Lemon Blueberry Yogurt Loaf
  1. Zest your lemons and rub with the sugar to release oils

  2. Add eggs, yogurt and vanilla to the lemon zest mixture

  3. Whisk the wet ingredients together

  4. In a separate bowl, combine dry ingredients (baking powder, salt, and flour)

  5. Whisk dry ingredients into wet ingredients until just combined

  6. Stream in neutral oil (avocado oil) while whisking

  7. Coat frozen blueberries in flour

  8. Fold blueberries gently into the batter

  9. Pour batter into an 8.5x4.4 loaf pan

  10. Bake at 350°F for 50-60 minutes (tent with foil if the top gets too dark)

  11. While baking, bring sugar and lemon juice to a boil and reduce until syrup forms

  12. Brush the fresh loaf with syrup immediately after removing from oven

  13. Let cool before serving
