Hot Cross Buns
  1. Mix the dough until it's nice and smooth, about 30 minutes.

  2. Add the raisins and mix for another 2-4 minutes.

  3. Knead the dough and let it rise for 40-50 minutes until doubled in size.

  4. Divide the dough into 12 equal pieces and shape them into buns.

  5. Place the buns in a greased baking pan and let them rise for another 40-50 minutes.

  6. Make a paste with 80g of plain flour and water to pipe the crosses on top of the buns.

  7. Bake the buns at 190°C for about 20 minutes.

  8. Brush the hot buns with the apricot glaze.
