Mix the dough until it's nice and smooth, about 30 minutes.
Add the raisins and mix for another 2-4 minutes.
Knead the dough and let it rise for 40-50 minutes until doubled in size.
Divide the dough into 12 equal pieces and shape them into buns.
Place the buns in a greased baking pan and let them rise for another 40-50 minutes.
Make a paste with 80g of plain flour and water to pipe the crosses on top of the buns.
Bake the buns at 190°C for about 20 minutes.
Brush the hot buns with the apricot glaze.
