Mix the chicken marinade ingredients well and marinate for 10 mins or more (the longer the better flavor)
Cook the chicken on medium heat for 8 mins till golden brown
Cook the rice with the seasonings until 80-90% cooked, then drain the water, turn off the heat and cover to let the rice cook in its steam for 5mins
In a separate pan, add the onion and the same seasonings used for the chicken
Add the crushed tomatoes and the light cream cheese, then add the cooked chicken, mix and simmer
Garnish with coriander and serve with the cooked rice
