In a small bowl, mix together the sauce ingredients (dark soy sauce, oyster sauce, mirin, brown sugar, rice vinegar, and chicken broth). Taste and adjust. Set aside.
In a pan on medium heat, cook the ground pork until 90% done.
Add in the carrots and mushrooms. Stir together.
Add in the noodles, edamame, and sauce. Gently mix to combine well.
Top it off with green onions and chili. Serve and enjoy.
