Pancakes
  1. Make the pancake batter by whisking together flour, sugar, baking powder, baking soda, and salt.

  2. Add the eggs and melted butter to the buttermilk, then combine the wet ingredients with the flour mixture, and mix until no lumps remain.

  3. Make the pancakes in batches by spooning the batter into a lightly greased skillet, cooking until bubbles form and edges look dry, then flipping and cooking the other side.

Note:

You can make buttermilk yourself by whisking together 1 ¼ cup milk and 1 tsp lemon juice. Set aside for 5 minutes, allowing the milk to thicken/curdle.

You can add any fruit you'd like; I've used blueberries and finely chopped apples.
